Guinea meat (from guinea fowl) has a unique flavor that’s often described as a cross between chicken and pheasant. Their slightly red meat is a lean exciting flavor stronger than chicken with some of the richness of duck. Guineas have a 50/50 meat to bone ratio which is higher than many other poultry varieties.
Flavor: Richer and slightly gamier than chicken, but not overpowering. It has a mild wild taste that’s closer to a lean game bird like pheasant or quail.
Texture: The meat is lean and firm, especially the breast, which can be a bit dry if overcooked. The dark meat is more tender and flavorful.
Aroma: Has a slightly earthy smell, especially when roasted or grilled.
People often say it tastes like "chicken with character" — familiar but more interesting. It pairs well with herbs like rosemary, thyme, and garlic, and it benefits from slow cooking, braising, or roasting with some added fat or moisture.
All poultry have been air chilled, a preferred method because it better preserves the bird's flavor, let's the meat absorb marinades better and doesn't add water weight. Air chilled meat is more environmentally friendly than water chilling because it produces less contaminated water.
